Ingredients
  

  • 4 cups Chex cereal
  • 4 cups Lucky Charms cereal
  • 3 cups pretzel sticks
  • 2 cups cereal marshmallows
  • 2 cups green M&Ms; (mint version recommended)
  • 24 oz white chocolate
  • A few drops green gel food coloring
  • Gold edible glitter or festive gold sprinkles

Method
 

Prepare the Mix
  1. In a very large bowl, combine the Chex cereal, Lucky Charms cereal, pretzel sticks, cereal marshmallows, and green M&Ms. Toss gently to distribute all ingredients evenly.
Melt and Color the Chocolate
  1. Melt the white chocolate using either a double boiler or a microwave. For the microwave, place the white chocolate in a microwave-safe bowl and heat in short 30-second bursts, stirring thoroughly after each interval, until smooth and fully melted. For a double boiler, set a heatproof bowl over a saucepan of simmering water (ensuring the bowl does not touch the water) and stir continuously until the chocolate is smooth and glossy.
  2. Once melted, add a few drops of green gel food coloring and stir until you achieve a vibrant, uniform leprechaun-green color.
Combine and Harden
  1. Pour the beautifully green melted white chocolate over the cereal mix in the large bowl. Stir carefully and thoroughly with a spatula or large spoon until all the dry ingredients are evenly coated in the green chocolate.
  2. Immediately spread the coated mix in a single layer over sheets of parchment paper placed on your counter or baking sheets. While the chocolate is still wet and glossy, generously sprinkle the entire surface with gold edible glitter or gold sprinkles.
  3. Let the mix harden completely at room temperature, which usually takes about an hour, or speed it up by placing it in the refrigerator for about 15-20 minutes.
Break and Enjoy
  1. Once fully hardened, break the Leprechaun Bait into bite-sized pieces.
  2. Serve and enjoy immediately. Store any leftovers in an airtight container to maintain its freshness.
