  • 5 1/2 cups Lucky Charms cereal
  • 1 teaspoon pure vanilla extract

Method
 

  1. Prep Your Pan: Begin by thoroughly greasing a 9x9 pan with cooking spray. Make sure to get the sides too. This simple step is crucial for easy removal of your treats later, so set it aside.
  2. Brown the Butter: In a large pot, melt the unsalted butter over medium heat. Watch it carefully as it melts, sizzles, and then begins to foam. Keep stirring occasionally until the butter solids at the bottom of the pot turn a light amber color and release a rich, nutty, caramel-like aroma. This Maillard reaction is the secret to our exceptional flavor.
  3. Melt Marshmallows & Add Twist: Immediately add the marshmallows and pinch of salt to the browned butter. Stir continuously with a rubber spatula, making sure to scrape down the sides of the pot to ensure the marshmallows melt evenly and do not burn. As soon as the marshmallows are fully melted and smooth, remove the pot from the heat immediately. This step is critical; do not overcook them. Now, stir in 1 teaspoon of pure vanilla extract, combining thoroughly until it is fully incorporated into the smooth marshmallow mixture.
  4. Combine Cereal: Add the 5 1/2 cups of Lucky Charms cereal to the pot. Gently but quickly fold the cereal into the melted marshmallow mixture with your rubber spatula until every piece of cereal is completely coated. Remember to work quickly, as the mixture will stiffen as it cools.
  5. Press & Set: Spoon the mixture into your prepared 9x9 pan. To press it down into an even layer without sticking, I suggest using a piece of parchment paper on top, a lightly greased spatula, or even slightly damp hands. The trick here is to press gently; avoid pressing too firmly, as this can result in dense, hard treats instead of the desired soft, gooey texture.
  6. Cool & Cut: Place the pan in the fridge to set for at least 20 minutes, or you can leave it at room temperature for about 1 hour, until the treats are firm. Once set, use a sharp knife, lightly greased if needed, to cut the treats into 12 rectangles. Now, they are ready to enjoy!
