Step 1: Melt the Coating
- In a microwave-safe bowl, combine 1 cup of high-quality white chocolate chips, 1/4 cup of creamy peanut butter, and 1/2 tablespoon of coconut oil. Microwave this mixture on HIGH for 30 seconds. Carefully remove the bowl and stir the ingredients thoroughly until they are well combined. Return the bowl to the microwave and continue cooking in 15-second intervals, stirring after each, until the mixture is completely smooth and glossy. Watch carefully to avoid burning the chocolate. Once smooth, stir in a few drops of green gel food coloring until you achieve your desired vibrant green color. The mixture should smell wonderfully sweet and peanut buttery.
Step 2: Coat the Cereal
- Pour the 4 cups of Chex Rice Cereal into a large mixing bowl. Immediately pour the warm, smooth, green chocolate mixture over the cereal. Using a spatula, gently fold and stir the cereal until every piece is well coated with the vibrant green mixture. Be gentle to prevent crushing the delicate cereal pieces. You want all the cereal covered in a beautiful, even layer of green chocolate.
Step 3: Sugar Shake
- Open a large gallon size zip lock bag and carefully pour the chocolate-coated cereal mixture into it. Add 3/4 to 1 cup of powdered sugar over the coated cereal. Seal the bag securely, ensuring there is plenty of air inside, and then shake vigorously until all the cereal pieces are completely and evenly coated with the powdered sugar. This creates the classic 'muddy' look and helps prevent stickiness. Start with 3/4 cup of powdered sugar and add more if you desire a thicker coating.
Step 4: Set & Finish
- Once coated, pour the Puppy Chow mixture onto a piece of parchment paper or wax paper spread on a cookie sheet. Spread it into a single layer and allow it to set at room temperature for about 15 to 20 minutes, or until the chocolate coating is firm. As it begins to set but is not yet completely firm, sprinkle the 1/4 cup of M&M's, 1/4 cup of Shamrock Sprinkles, and 1/4 cup of Shamrock Marshmallows over the Puppy Chow. Gently stir them in to distribute them evenly throughout the mixture. This ensures the mix-ins adhere without melting into the still-warm chocolate. Once fully set, you can gently break apart any larger clumps to create individual, snackable pieces.
