Prepare Your Bananas and Walnuts
- Slice your ripe banana into even pieces. In a small pan, melt a touch of butter or coconut oil over medium heat. Add the banana slices and cook for a few minutes until lightly browned and fragrant. Remove caramelized banana and set aside.
- In the same pan (or a separate dry pan), add your chopped walnuts. Dry-toast them over medium heat for 2-3 minutes, stirring frequently, until aromatic and slightly darkened. Remove from heat.
Cook the Banana Milk Base
- Add the caramelized bananas and toasted walnuts to a pot. Pour in the oat milk (or your chosen milk), cinnamon, vanilla extract, and honey (if using). Cook this mixture over medium heat, stirring occasionally, until it just reaches a gentle boil.
- Reduce the heat and continue to simmer for 10 minutes, allowing all the flavors to infuse into the milk. Keep an eye on it to prevent scorching.
Blend and Strain for Smoothness
- Take the pot off the heat and carefully transfer the mixture to a blender. Blend on high speed until it is completely smooth and creamy.
- Place a fine-mesh strainer over a bowl or another pot. Pour the blended banana milk through the strainer, pressing down on any solids with a spoon to extract all the flavorful liquid. This ensures a silky-smooth latte base.
Combine and Serve
- Once you have your smooth banana milk base, froth it. If using a milk frother, froth until warm and airy. If not, whisk vigorously in a small saucepan over low heat or shake in a sealed jar until frothy.
- Pour your warm, frothed banana milk into your favorite mug, leaving space for the coffee. Add your freshly brewed coffee or espresso shots to the banana milk and give it a gentle stir.
- Top your homemade banana bread latte with a sprinkle of extra cinnamon, and enjoy!

Notes
Achieve a silky-smooth latte by starting with very ripe bananas and straining the banana milk base. Enjoy it hot or iced. The leftover banana-walnut pulp can be used in oatmeal or baking. The banana milk base stores in the fridge for 3-4 days for make-ahead convenience. Nutrition information is estimated based on common ingredients and serving sizes and may vary.
