Festive Shamrock Mini Pizza: Garlic-Herb Crust!

  • 6 tablespoons mozzarella cheese shredded, or 6 halved mozzarella balls
  • 20 olives sliced
For the Garlic-Herb Crust Twist:
  • a few tablespoons olive oil
  • finely minced fresh garlic
  • a pinch dried oregano
  • a touch finely chopped fresh parsley

  1. First, preheat your oven to a warm 425°F (220°C). While the oven heats up, take a baking sheet and line it with parchment paper. This simple step ensures your mini pizzas will not stick and makes for easy cleanup.
  2. Lightly dust a clean surface with a sprinkle of flour. Roll out your pizza dough to an even, medium thickness. Use a shamrock-shaped cookie cutter to cut out your mini pizza shapes. Carefully transfer these festive dough cutouts to your prepared baking sheet, leaving a little space between each.
  3. Combine olive oil, finely minced fresh garlic, a pinch of dried oregano, and a touch of finely chopped fresh parsley. Generously brush each shamrock dough cutout with this prepared garlic-herb infused olive oil. You will see the dough begin to glisten with the fragrant oil. This layer creates an incredible base, ensuring a flavorful and wonderfully crispy crust as it bakes.
  4. Now it is time to build your mini pizzas. Spread about one teaspoon of pesto on each shamrock, ensuring a thin, even layer.
