Ingredients

  • 20 small Red potatoes (golf ball size)
  • 1/2 cup Corned beef finely diced
  • 1/4 cup Cheddar cheese shredded
  • 1 tablespoon Butter melted
  • 1/8 teaspoon Salt

Equipment

  • large pot
  • Baking sheet
  • Melon baller or small teaspoon
  • mixing bowl
  • small skillet
  • Pastry Brush

Method

Prep & Boil Potatoes
  1. Fill a large pot with water and bring it to a rolling boil on your stovetop. Carefully add the small red potatoes. Boil them until they are fork tender, but still firm enough to hold their shape. This usually takes about 15-20 minutes for golf-ball sized potatoes. Avoid overcooking to prevent mushy skins.
Cool & Preheat Oven
  1. Once the potatoes are perfectly cooked, carefully drain them and allow them to cool completely for easy handling. While the potatoes cool, preheat your oven to 400°F (200°C).
Halve & Stabilize
  1. Once the potatoes are cool enough to handle, cut each one in half lengthwise. To create a stable base, gently cut a small, thin slice off the rounded bottom of each potato half. This trim ensures they can sit flat on a baking sheet without tipping over.
Scoop the Insides
  1. Using a melon baller for precision, or a small teaspoon if you prefer, carefully scoop out the soft inside flesh of each potato half. Leave a sturdy shell intact. Place all the scooped potato insides into a separate mixing bowl; this will be the base for your flavorful filling.
Prepare the Flavorful Filling
  1. In the bowl with the saved potato insides, add the shredded cheddar cheese. Now, in a separate small skillet, sauté the finely diced corned beef in a small amount of butter (or reserved fat from corned beef) until it is slightly crispy and deeply savory. Add this crispy corned beef to the potato mixture along with the 1 tablespoon of melted butter. Mash and mix until all ingredients are well combined and evenly distributed.
Season the Filling & Skins
  1. Taste the potato mixture and season with salt to your preference, ensuring a well-balanced savory flavor. Additionally, sprinkle a light dusting of salt over the inside and outside of the hollowed potato halves to enhance their flavor.
Stuff & Arrange
  1. Generously scoop the flavorful potato-corned beef-cheese mixture back into each hollowed potato half, mounding it slightly for an appealing presentation. Arrange the stuffed Irish Potato Bites on a baking sheet, ideally lined with a silicone mat or parchment paper for easy cleanup and to prevent sticking. Ensure they are not overcrowded.
Initial Bake
  1. Place the baking sheet with the stuffed Irish Potato Bites in the preheated oven. Bake for 10 minutes. This initial bake helps to melt the cheddar cheese and ensures the filling is warmed through perfectly.
Achieve Golden Crispiness (Unique Twist)
  1. Remove the baking sheet from the oven. Using a pastry brush, apply a thin layer of additional melted butter over the exterior of each scooped potato half. Return the baking sheet to the oven and activate the broiler. Broil for an additional 2-3 minutes, watching very carefully, until the potato skins are beautifully golden brown and delightfully crispy. This final broiling step is essential for ultimate texture!
Serve Immediately
  1. Remove your crispy Irish Potato Bites from the oven and serve them hot. Enjoy the perfect combination of crispy, cheesy, and savory flavors.

Dry potatoes well and avoid overcooking for crisp skins. Brush with melted butter and broil for a golden finish. A melon baller aids scooping. This recipe freezes well for make-ahead convenience. Serve hot with optional sour cream or chives.
