Ingredients

  • 24 large brown mushrooms (cleaned)
  • 2 tablespoon butter (unsalted)
  • 1 tablespoon olive oil
  • ½ onion (chopped)
  • 4 cloves garlic (minced)
  • shallots (finely chopped, for caramelizing)
  • 2 tablespoon white wine
  • 1 tablespoon lemon juice
  • ¼ cup breadcrumbs (for filling)
  • 4 ounce cream cheese
  • ½ cup blue cheese (crumbled)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • Panko breadcrumbs (for topping)
  • Parmesan cheese (freshly grated, for topping)
  • 1 tablespoon parsley (for garnish)

Equipment

  • Baking pan
  • Mushroom brush
  • Large Skillet
  • small bowl

Method

Prep the Oven & Mushrooms
  1. Begin by preheating your oven to 400°F (200°C).
  2. Gently clean your large brown mushrooms using a mushroom brush or a damp paper towel. Carefully remove the stems without breaking the caps.
  3. Place the cleaned mushroom caps stem-side-down on a baking pan. Bake them for 10 to 15 minutes to draw out excess moisture.
  4. After baking, soak up any additional moisture from the caps with paper towels, ensuring they are as dry as possible.
Sauté Aromatics & Shallots
  1. While the mushroom caps are pre-baking, finely chop the mushroom stems.
  2. In a large skillet, combine the butter and olive oil and heat over medium heat until the butter melts and is shimmering.
  3. Add the finely chopped onion, minced garlic, and finely chopped shallots to the pan. Cook this mixture slowly, stirring occasionally, until the onions and shallots are translucent, fragrant, and beautifully golden brown, about 5-7 minutes. This caramelization adds a deep, sweet complexity.
  4. Then, add the chopped mushroom stems and cook for an additional 3 minutes, allowing their earthy flavors to meld.
Create the Creamy Blue Cheese Filling
  1. To the sautéed mixture in the skillet, add the white wine, lemon juice, and breadcrumbs, stirring well to combine. The breadcrumbs will help absorb moisture and bind the filling.
  2. Next, add the cream cheese and mix continuously until it is fully melted and smoothly incorporated into the mixture.
  3. Finally, add the crumbled blue cheese, stirring gently until it is just combined and warm through. Do not overcook after adding the blue cheese.
Stuff & Top
  1. Generously fill each pre-baked mushroom cap with the creamy blue cheese mixture; pile it high.
  2. In a small bowl, combine Panko breadcrumbs and freshly grated Parmesan cheese. (For an extra touch of color and depth, you can add a pinch of smoked paprika).
  3. Sprinkle this crispy mixture generously over each stuffed mushroom, gently pressing it down so it adheres well. This will create that irresistible golden crust.
Bake to Golden Perfection
  1. Carefully place the stuffed and topped mushrooms back onto the baking pan.
  2. Bake for 10 to 15 minutes, or until the Panko-Parmesan topping is golden brown and delightfully crispy, and the creamy filling is bubbly and heated through.
Garnish & Serve
  1. Once baked, transfer your Blue Cheese Stuffed Mushrooms to a serving platter.
  2. Garnish them with a sprinkle of fresh parsley for a touch of vibrant color and freshness.
  3. Serve them warm and watch them disappear!

Prevent soggy mushrooms by brushing clean and pre-baking caps. Caramelize shallots slowly for deep flavor; ensure generous Panko-Parmesan topping for crispiness. Prepare up to 2 days ahead. Serve warm, garnished with fresh parsley.
